About chocolate, the Conquistadors of the New World say in their chronicles: “After drinking it, you can travel entire days without fatigue or need for food.” They add: “The beans are roasted and ground, then mixed with water to form a paste. This blend is heated till the cocoa butter rises to the surface, then mixed again and beat until a foamy liquid is formed to drink cooled." To this basic recipe the Aztecs would add chilies, vanilla sticks, pepper and cornflour. Later on, Oaxaca nuns improved the drink to suit Western taste, incorporating sugar, cinnamon and anis. And much later, the Indo American prime product reached sublime heights in the hands of European chocolate makers. By the middle of the nineteenth century the first chocolate industries had emerged, today’s undisputable protagonists when it comes to preparing dream delights.
